This mild, but rich and comforting curry, will warm your tummy and fill your heart.  We roast our eggplants to perfection before adding our delicious spices and black beans.   Aubergines are packed with Vitamins C, K, B6, thiamin and niacin, minerals & antioxidants.  Black beans are great for gut health and have a high protein content.  Serve with our Brown Basmati  Rice with fresh Coriander.
